Yarri x Tim Hardy - Dunsborough

Yarri & Friends—a new series where we invite some of the country’s most exciting chefs to take over the Yarri kitchen for one night only. First up is Tim Hardy, former executive chef and co-founder of Tasmania’s acclaimed Van Bone restaurant.

On Friday 18 July 2025, Tim will take the reins with a five-course menu built around seasonal South West produce—including from our own garden—and matched wines from Mr Barval Fine Wines.
This intimate event will host limited numbers, offering a unique opportunity to experience the coming together of three distinct philosophies—garden-led food, fire and technique, and expressive, site-driven wine.

The Summertown Aristologist x Van Bone - Adelaide Hills

This rustic outdoor long lunch and garden experience by The Summertown Aristologist and the Van Bone team from Tasmania – awarded Best Destination Dining 2023 by Gourmet Traveller – will unfold in a Basket Range valley on the Lucy M estate. The afternoon will feature talks from the restaurant’s gardener and local winemakers, plus the chance for guests to get their hands dirty harvesting and planting veggies. Learn about the producedriven food and natural wine that make this pocket of the Adelaide Hills so special. Settle in for a shared long-table lunch with several courses and matched wine from Lucy M, Commune of Buttons and Chateau Comme Ci Comme Ca – the three producers involved in The Summertown Aristologist. The day’s menu will be based on garden produce and local, organically farmed proteins cooked on fire pits. Chefs and winemakers will chat through their processes as each course is presented. Enjoy an afternoon away from it all – one that promises insights and inspiration.

On Sunday, April 6 2025, Chef’s Tim Hardy and Jamie Musgrave will reunite to craft a menu that embodies their shared philosophy - elevating peak-season ingredients with refined technique, fire, and deep respect for the land. This is more than just a dinner - it’s a fleeting chance to experience the essence of Van Bone, the acclaimed Tasmanian destination restaurant before it becomes a memory.

The Culinary Pedigree of Chef Tim Hardy. A chef deeply connected to the land, Tim Hardy has spent his career refining a philosophy of cooking that is seasonal, ethical, and fire-driven. He trained in some of Australia’s most celebrated regional restaurants, including Vasse Felix (WA) with Chef Jamie, The Lake House (VIC), and Brae (VIC), before traveling to Sweden to work at the acclaimed Daniel Berlin Krog, where his perspective on food was reshaped by Nordic simplicity and precision.

With up to 18 courses cooked over fire, Van Bone quickly became one of Australia’s most sought-after dining experiences, earning accolades such as Best Destination Dining (Gourmet Traveller 2023) and multiple top restaurant rankings.

Now, with Van Bone closed, this one-night collaboration is a rare opportunity to experience Tim’s deeply considered, fire-kissed approach to cooking - before it becomes a memory.
